The Robiols are a typical sweet of Mallorcan Holy Week.
Like marks the tradition, in Mallorca in the days of Holy Week they meet family and friends in a house and prepare Robiols, together with Crespells and Panades and once finished are shared among all. This day It becomes a great party for all attendees.
Hay many different recipes to prepare Robiol, I have attached one but can be found depending on each house with an infinity of details that may vary.
The Robiols are a stuffed dessert, This filling can be of different ingredients like, jams or jams of different flavors, angel hair, cottage cheese, cream, chocolate cream ...
It is not a dessert of great difficulty, but if that being so thin we must be careful not to break them because the dough can be very brittle.
For the dough:
- 700 normal flour
- 100 grams of butter (or butter)
- 1 glass of oil Olive
- 2 egg yolks
- 100 grams of sugar
- 2 tablespoons of water
- Sugar glas to sprinkle (optional)
For the filling:
The robiols can be filled with different ingredients, you must choose the one you want from this list.
- Marmalade of different flavors
- Angel hair
- Cottage cheese
- Chocolate Cream
We put the flour in a bowl and then mix it with butter, olive oil , the 2 egg yolks, the sugar and the water.
What We knead everything very well until there is a homogeneous massa, we cover it with a cloth and let it sit in the fridge for half an hour at a time hour.
When the resting time has passed, we will take pieces of dough and, on the floured table and helping us with a rolling pin kitchen, we make circles of about 10 or 12 centimeters in diameter.
We will fill half circle with jam, or cottage cheese, or angel hair, or the cream ... without reaching the edges, we will fold and join the edges with the fingers and with the help of a paste cutter we will remove the excess and with a fork we will seal the edges.
Then we will place the Robiols in a baking tray greased with butter, we will oven for 20-25 minutes at 180º.
Finally sprinkle with icing sugar (Optional)
