Coca de verduras is a popular dish in Mallorcan cuisine. HE eat at any time of day, mid-morning, before eating as
Appetizer, in the afternoon when you are a little hungry. The most typical
is the one that carries vegetables with herring but the latter can be changed
for tuna, loin chunks, another type of fish ... it can also be done only with vegetables.
For the dough:
a cup of cold water
1 pressed yeast nut
1 small glass of oil
2 teaspoons of butter
the flour you take
1 bunch of chard
1 bunch of tender onions
1 bunch of parsley
.... paprika and 2 herrings
First we must prepare the dough, we will unleash the yeast in the warm water.
Next, In a container we will put the oil, the butter and the water with the yeast. We will add the flour that is taking with a little salt and knead with your hands until the dough is made, that is, Do not get stuck in your hands.
When the dough is ready, anoint with oil and let it sit for half an hour in a container covered with a cloth.
At half an hour we will place the dough in the oven tray well stretched and put it in the oven to 180º for about 5 minutes.
While the dough rests, prepare the vegetables, cut them into small pieces and season them with salt, oil and paprika.
Next we will place all the vegetables, tomato slices and pieces of herring on top of the dough and put it in the oven about 40 minutes up and down.
