When I hear the word "tumbet" it reminds me a lot of summer, since This typical Mallorcan dish is eaten at this time and with vegetables from this season.
It's a vegan dish because it's only made with vegetables although in Mallorca they often accompany it with meat, fish or even fried eggs.
You could say it looks like pisto since it takes the ingredients very similar, but the difference is in the size of the ingredients and in that in the tumbet are presented in separate layers and not all mixed.
Catalan sanfaina or French ratatouille are also very similar dishes.
Ingredients for 4 people:
- 3 aubergines
- 3 potatoes
- 3 green peppers
- 3 courgettes
- 1 onion
- 1 kg of tomatoes that are ripe
- extra virgin olive oil
We'll start by washing all the vegetable, then cut the potatoes, eggplant and zucchini sliced not very thin. We advise that the aubergines rest 5 minutes in a colander with a little salt to that they eliminate the excess of water.
The peppers can be cut both in strips and squares not very small, what works best for you. The onion can also be cut into squares or julienne.
When we have it all cut out they start frying one by one each of the ingredients, without mixing in hot oil, garlic and a sheet of laurel. When removing the ingredients we will remove the excess oil placing each one in a container with absorbent paper.
It's the time to prepare the tomato sauce: we will peel the tomatoes, we will remove the seeds, we will chop them and put them in a pan to make a thick sauce crushing them from time to time with the fork. They should be simmering.
Now we will start the Place in the baking tray making different layers. Place the potatoes in the bottom, then the eggplant, the zucchini, the pepper, the onion and finally a good layer of tomato sauce.
Bake at about 180º for about 15 minutes.
